Directions

  1. Preheat your oven to 350°F.

  2. Line an 8x8 baking pan with parchment paper.

  3. Add the melted butter, flour, salt, and sugar to a large bowl and mix well.

  4. Pour the mixture into the baking pan. Bake for 20 minutes and cool for 10 minutes.

  5. In a separate bowl, combine the lemon juice, 1 tablespoon of lemon zest, eggs, and vanilla extract. Mix well.

  6. Once the crust is cooled, pour the filling onto it and bake for an additional 25 minutes.

  7. Garnish with remaining zest and lemon wedges, cool, and cut into 8 bars.

Cooking Tip

For some added fat content, try serving this delicious dessert with a dollop of whipped cream. Not a fan of lemon? Replace the juice, zest, and wedges with another type of citrus—try lime, grapefruit, or orange.
