Omelet in a Mug
1 tablespoon milk
1 tablespoon cheese (try grated pepper jack, shredded cheddar, or even crumbled feta)
2-4 tablespoons filling of your choice (think diced green pepper, green onions, sliced deli meat, mushrooms, crumbled bacon…the options are endless!)
Salt and pepper, to taste
- Crack eggs into a microwave-safe mug. Beat lightly with a fork.
- Stir in the milk, cheese, and fillings. Season with salt and pepper to taste.
- Microwave for 1-2 minutes. Start with 1 minute, then continue cooking in 15-second intervals until eggs are cooked.
