Ingredients

Chicken

2 boneless and skinless chicken breasts

2 boneless and skinless chicken thighs

½ teaspoon garlic powder

½ teaspoon paprika

½ teaspoon thyme powder

1 teaspoon black pepper

1 teaspoon salt

1 tablespoon olive oil

2 garlic cloves, minced

⅓ onion, julienne cut

Creamy Chipotle Sauce

3 chipotle peppers*

¼ onion, chopped

1 garlic clove, minced

2 medium tomatoes

1 teaspoon oregano

½ tablespoon paprika

½ tablespoon black pepper

½ tablespoon vinegar

1 tablespoon olive oil

32 ounces whole milk Greek yogurt

1 tablespoon cornstarch

1 teaspoon salt

½ cup chicken bone broth (or regular chicken broth)

9 almonds, blanched

⅓ cup cranberries

*The number of chipotle peppers is suggested. Use according to personal taste for spicy food.

Directions

  1. Start by soaking the chipotle peppers and tomatoes in hot water and set them aside to begin preparing the chicken.
  2. Boil the chicken for 20 minutes.
  3. Season with salt, pepper, paprika, garlic powder, and thyme powder, and set aside for 15 minutes.
  4. Pour olive oil in a previously heated pan and add the garlic and onion. Cook at medium heat for a couple of minutes until onion is golden brown, then remove from pan and set aside.
  5. Cook two chicken pieces at a time in a pan at medium heat until they are evenly browned, flipping about every 4 minutes. Ensure chicken is cooked throughout and no longer pink inside. Set aside.
  6. Peel and seed the tomatoes and place in a blender.
  7. Add the rest of the sauce ingredients to the blender and blend until you get an even, creamy texture.
  8. Pour sauce on the cooked chicken in the pan and simmer at low heat for about 5 minutes until bubbly. Now your Tasty Chicken in Creamy Chipotle Sauce is ready to eat!
