10-12 eggs
¾ cup shredded cheese
1 red bell pepper
½ cup spinach
Pinch of salt and pepper
Directions
- Preheat oven to 350°F.
- Spray muffin tin with cooking spray.
- Whisk 10-12 eggs in a bowl.
- Dice red bell pepper.
- Add red bell pepper, spinach, shredded cheese, and a pinch of salt and pepper to the eggs.
- Pour evenly into muffin tin.
- Bake for 25-30 minutes.
- Cool for 5 minutes and enjoy!
