Ingredients

10-12 eggs

¾ cup shredded cheese

1 red bell pepper

½ cup spinach

Pinch of salt and pepper

Directions

 

  1. Preheat oven to 350°F.
  2. Spray muffin tin with cooking spray.
  3. Whisk 10-12 eggs in a bowl.
  4. Dice red bell pepper.
  5. Add red bell pepper, spinach, shredded cheese, and a pinch of salt and pepper to the eggs.
  6. Pour evenly into muffin tin.
  7. Bake for 25-30 minutes.
  8. Cool for 5 minutes and enjoy!

Don’t have a muffin tin? This recipe is just as delish as an egg casserole in a 13x9 baking dish. And you can mix the ingredients ahead of time, cover with foil, and store in the fridge overnight to save time in the morning!
