Ingredients
5 sprigs basil
⅔ cup arugula
½ bunch parsley
1 garlic clove
2 ounces Parmesan
5 tablespoons olive oil
1 tablespoon roasted pine nuts
Salt, to taste
2 pounds prepared gnocchi
Directions
- Coarsely chop basil, arugula, and parsley.
- Peel and chop the garlic.
- Cut Parmesan into chunks.
- Add basil, arugula, parsley, garlic, parmesan, olive oil, and pine nuts to a blender or food processor and blend until smooth. Season with salt to taste.
- Cook the gnocchi according to package instructions and mix well with the pesto. Serve immediately.
