Ingredients
9 ounces mini buffalo mozzarella balls
½ mango
1 small head of radicchio (about 2 cups, chopped)
1 cup arugula leaves
2 ounces cherry tomatoes
2 tablespoons chopped walnuts
2 tablespoons pomegranate seeds
Directions
- Drain the buffalo mozzarella and pat dry.
- Peel and cube the mango.
- Wash the radicchio and cut into strips.
- Cut each tomato in half.
- Layer mozzarella balls, mango, radicchio, arugula, cherry tomatoes, chopped walnuts, and pomegranate seeds together in a glass jar. Top with dressing (recipe follows) when ready to serve and shake gently.
Dressing Ingredients
1 tablespoon tahini
1 tablespoon lemon juice
3 tablespoons olive oil
2 tablespoons full-fat yogurt
Directions
- In a separate jar, mix together all ingredients. Close well and shake to mix.
