Ingredients

9 ounces mini buffalo mozzarella balls

½ mango

1 small head of radicchio (about 2 cups, chopped)

1 cup arugula leaves

2 ounces cherry tomatoes

2 tablespoons chopped walnuts

2 tablespoons pomegranate seeds

Directions

  1. Drain the buffalo mozzarella and pat dry.
  2. Peel and cube the mango.
  3. Wash the radicchio and cut into strips.
  4. Cut each tomato in half.
  5. Layer mozzarella balls, mango, radicchio, arugula, cherry tomatoes, chopped walnuts, and pomegranate seeds together in a glass jar. Top with dressing (recipe follows) when ready to serve and shake gently.

Dressing Ingredients

1 tablespoon tahini

1 tablespoon lemon juice

3 tablespoons olive oil

2 tablespoons full-fat yogurt 

Directions

  1. In a separate jar, mix together all ingredients. Close well and shake to mix.
